Acacia honey – where it comes from

What we call “acacia” in Poland is botanically black locust (Robinia pseudoacacia), also known as false acacia – true acacia is a completely different genus of trees, growing mainly in Africa and Australia. Black locust usually blooms in Poland at the turn of May and June, with white, hanging clusters of flowers with an intense, sweet scent, and it blooms briefly, most often for 10 to 14 days. This window is fragile: rainy or too cold weather during this time can ruin the entire seasonal harvest, which is why acacia honey can be harder to find in some years than multifloral honeys.

Yerbador Raw Acacia Honey comes from apiaries in the West Pomeranian Voivodeship, where alleys and groves of black locust grow. The honey is made without heating and without dilution, in small batches, just like the other varieties in the Raw Polish Honeys line.

It’s precisely this sugar ratio that’s responsible for its two most characteristic features: a very light, almost transparent colour and exceptionally slow crystallisation, measured in months rather than weeks as with rapeseed or multifloral honey. The high fructose content is also the reason why acacia honey is often described as one of the gentler honeys for blood sugar levels, though it’s still a high-sugar product and should still be consumed in moderation.

The flavour is just as distinctive as the colour: delicate, floral, with a barely noticeable hint of vanilla, without the sharp intensity that buckwheat honey has. This makes acacia honey the variety most often favoured by children and people who don’t generally like strong-tasting honey.

Dark honeys, such as buckwheat or honeydew, have a higher content of polyphenolic compounds responsible for antioxidant activity, but this doesn’t make acacia honey inferior — it’s simply different. It contains, among other things, chrysin, a flavonoid typical of light honeys, and its value lies elsewhere: in the versatility of its flavour and in the fact that it won’t overpower the more delicate ingredients of a dish, as a stronger variety might.

However, it’s a dietary supplement, not a medicine – treat it as support for your everyday diet, not a way to treat a cold or other ailments.

Important safety notice: no honey, including acacia honey, should be given to children under 1 year of age. Honey may contain spores of Clostridium botulinum bacteria, which are harmless to older children and adults but can cause infant botulism in babies. This is a standard pediatric recommendation, regardless of the brand or quality of the honey.

How to use acacia honey every day
