Summer is in full swing, and with it come high temperatures. The heat gets to all of us, we lack motivation to do anything and need energy — on hot days the best solution is of course cold drinks that soothe our thirst when the thermometer goes wild.
Terere, or yerba mate drunk cold, can be a great alternative to sweetened drinks. Fans of our Yerbador dried leaves and yerba mate connoisseurs alike will surely enjoy this way of drinking dried Paraguayan holly leaves. This refreshing version works great on warmer days. Yerbador lovers know best that in such heat there’s nothing better than cold terere! Anyone who has tried yerba mate brewed cold and hot notices the taste differences — cold mate is less astringent and bitter, and sweeter than the one brewed hot.
Terere, just like hot mate, improves concentration, suppresses appetite, refreshes and stimulates. Thanks to its antioxidant content, it reduces oxidative stress. It works a bit more slowly as a stimulant than hot yerba mate, but it refreshes perfectly.
Terere is especially popular in Paraguay, where high temperatures — reaching around 40 degrees Celsius — are an everyday occurrence.
Paraguayans often mix mate poured with cold water with herbs, treating drinking such a blend as a way to prevent stomach aches or headaches. Cold yerba mate is so popular there that it even has its own holiday in Paraguay.

A Short History of Terere
Tereré is cold yerba mate, a drink prepared from dried leaves poured over with cold water and ice. Its history began in the 1930s in Paraguay, when the Paraguayans were fighting the Bolivians for control over the province. Russian soldiers fought in the Paraguayan ranks — and due to the very high temperatures in Paraguay, they were not used to the heat, so they started looking for a way to cool off with the traditional Yerba Mate drink. It turned out that they had trouble getting used to bitter yerba mate poured with hot water, so they started pouring various juices over the dried leaves instead. Over time, this variation of tereré won the hearts of Paraguayans, who began calling it Mate Russo in honor of its inventors.
WHAT WE NEED AND HOW TO PREPARE TERERE
We pour the dried leaves into a special vessel for drinking yerba mate — this is important, as it allows us to prepare the infusion the right way.

You will also need a bombilla (a straw with a filter), also available in our store, which is necessary due to the specific way of drinking yerba mate.
We pour very cold water over the dried leaves and wait a few minutes for them to release their juices.
Then we add the rest of the cold water and add ice cubes for an even more refreshing effect — this is the modern method.
The old school, however, says to first pour hot water at 70-75 degrees over the dried leaves, and once cooled, pour ice-cold water over them. But everyone can decide for themselves which option suits them best, according to their own taste and preference.
You shouldn’t pour lukewarm water over dried yerba mate leaves, as such a temperature lowers the quality and effect of the leaves. If we want our drink to be even more refreshing, we can pour sparkling water over the leaves; another good method is pouring fruit juice over the leaves, a method called Terere Russo. You can also use additions such as pieces of fruit or a mix of your favorite herbs, e.g. mint, lemon balm, and many others.
The vitamins contained in the dried leaves are soluble in both hot and ice-cold water.
