How to brew yerba so the first sip doesn’t put you off

The basic rule: fill your matero with yerba to about 1/4 of the vessel. If you’re just starting out, go with even 2 tablespoons at first – the infusion will be milder and easier to get used to. Water: 70–80°C, never boiling – boiling water scalds the leaves and draws out the bitterness that has put off more than one beginner. Tilt the vessel, insert the bombilla, and pour in batches. The same leaves can be refilled several, even a dozen or so, times.

Our yerba is made from Ilex paraguariensis leaves from Brazil, packed in Europe. Every batch can be put under the microscope: tests at IWNiRZ (Institute of Natural Fibres and Medicinal Plants – chromatography and botanical authenticity), analyses by J.S. Hamilton and GBA Polska (heavy metals, pesticides, PAHs), HACCP and KIWA systems, Swiss OROTAL certification and a Quality Certificate from the National Medicines Institute.
