How to brew it so you won’t regret it

Three rules are enough to start. First: fill the matero with dried leaves to about 1/4 of its volume — beginners are advised to start with even just 2 tablespoons, the taste will be milder and easier to get used to. Second: water at 70–80°C, never boiling — boiling water scalds the leaves and draws out bitterness. Third: pour water onto the same leaves multiple times, each subsequent infusion is milder than the last.
